Makes 8-10 pancakes.
2 eggs, separated
2 TBS oil
1 cup oats
1 cup water
Beat egg whites until stiff. Set aside. Combine egg yolks, water, oil and oats. Beat slightly and allow to stand for 5 minutes.
While waiting, stir together:
1/2 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt
2 TBS sugar
1/3 cup dry nonfat milk powder
Add wet ingredients, mix together. Fold in egg whites. Cook on griddle.
